Peanuts Snoopy Bao

Peanuts Snoopy Bao (1)I made bao today, also known as baozi, or nikuman (steamed meat bun) in Japanese.

The characters are from The Peanuts Gang – Snoopy, Charlie Brown and Woodstock.

Still need a lot more practice in making cute bao but at least this time the bao skin is thinner. But some parts were too thin and the meat started to show through in some of the bao. haha.

Here is the Recipe for Peanuts Snoopy Bao

makes about 14 baozi buns

*Recipe calls for salad oil. You can replace with other vegetable oil with no strong taste. Try not to use olive oil as it might add additional flavour to the buns.

(A) Ingredients for basic dough (white)

  • cake flour 75g
  • bread flour 15g
  • sugar 15g
  • instant dry yeast 2g
  • 50-52ml warm milk or soymilk (heat to about 40C, if its too hot it will kill the yeast) + blue gel coloring
  • pinch of salt
  • 0.5tbsp salad oil

(B) Ingredients for yellow/beige dough

  • cake flour 75g
  • bread flour 15g
  • sugar 15g
  • instant dry yeast 2g
  • 50-52ml warm milk or soymilk (no more than 40C, if its too hot it will kill the yeast) + blue gel coloring
  • pinch of salt
  • 0.5tbsp salad oil
  • *yellow edible icing colour
  • *brown edible icing colour

(C) Ingredients for black dough

  • cake flour 37.5g
  • bread flour 7.5g
  • sugar 8g
  • instant dry yeast 1g
  • 25ml warm milk or soymilk (no more than 40C, if its too hot it will kill the yeast) + blue gel coloring
  • pinch of salt
  • 2tsp salad oil
  • 1tsp charcoal powder

(D) Ingredients for meat filling 

Ingredients

  • minced chicken 200g  *you can change to pork or mixed meat if you prefer
  • chopped up chives, approx 1.5tbsp
  • 2 tbsp oyster sauce
  • 1.5 tsp japanese soy sauce
  • 1 tsp sesame oil
  • 1 tsp mirin
  • 1 tsp sake

Method – Making the white basic dough (recipe A)

1. In a bowl, add in half the flour, and all of the sugar, instant dry yeast.

2. Then add in the warm milk or soymilk. Mix well with a wooden spatula. Then add in the remaining flour, salt and salad oil. Mix again. The dough will come together (but not smooth yet). Scrap and remove everything from the bowl to your worktop.

3. Knead for a few mins until the dough is smooth and soft, and does not stick to your hands. Shape into a ball, pinch the bottom and place in the bowl. Cover with cling wrap for first fermentation – 30 to 40mins.

Method – Making the yellow and beige dough (recipe B)

4. The method is the same as above.

Except that you should add and mix in the *colour with the milk/soymilk. Mix well before adding the milk to the mixture to achieve an evenly coloured dough.

Method – Making the yellow and beige dough (recipe C)

5. Essentially the ingredients are the same as the white basic dough above except that the portion size is halved.

The method is also the same.

Method – Prepare the filling (recipe D)

6. In a bowl, add in the minced meat, chopped chives and seasoning. Mix well. The meat mixture should become a little more gooey/stickier after mixing.

After first fermentation (est 30 to 40mins)

7. Degass and divide the white dough into 5 portions, yellow dough into 5 portions, beige dough into 4 portions and black dough remains as one portion. Cover and let it rest for 10mins (bench time).

8. Then flatten the dough and wrap the meat fillig side. Decorate the bao using the black dough to create the details.

9. Place on a small sheet of baking paper.

10. Steam at high heat for 15mins on the steaming rack.

They are a little more challenging than usual bao but I assure you that the end result will still make you happy.
